Another Easy Weeknight Meal


We have found THE place to get pizza in Buckhead. It's called Piu Bello and its in the Disco Kroger (aka Fresh Fare) shopping strip at Piedmont and Peachtree. And oh my goodness, the pizza is fab. As a transplanted northerner in the South, our family has always been picky about good pizza. It has to be foldable and cheesy, with good sauce and even better crust. This one ranks up there with my parents' favorites up in Roswell, Alpine Bakery and Diesel Pizza.

But as much as we love delivery, sometimes its the most fun to make your own! Last night I made a super easy pizza - here's how you can do it too.

I like to pick up the fresh Publix pizza dough at the bakery counter. We also grabbed a mixture of baby bellas and white mushrooms, and a bag of Mixed Italian shredded cheeses. All of this comes to maybe $10 total if you stick with store-brand.

Spread the dough out on a greased baking sheet to be kind of rectangular-shaped like the sheet. Drizzle with a little olive oil, spread that around, and pre-bake for about 5 minutes at 350 degrees.

While that's cooking, prep your other stuff. For me, this meant cooking the mushrooms with some olive oil for about 5 minutes until tender. Or it could mean for you, chopping up your veggies or slicing pepperoni. Spread about half the cheese on the crust, then the mushrooms (or other toppings) and then the other half of the cheese. Continue to bake for about 10-15 minutes until the crust is crisped up and the cheese is melted.

Voila, easy homemade pizza with no delivery fee! Love it. Though Piu Bello might be getting a call from me later this week, not gonna lie.....

Here's my favorite way to make home made pizza.

You need a baking stone. If you have a gas grill, you put the stone on the grill and let it heat up. Transfer your rolled out dough onto the stone, and then put on your sauce and toppings. For some reason, the baking stone is non-stick, but it still helps to put some cornmeal on each side to help it slide off the stone. Cook until done at really high heat.

This also would work nice in the oven that way, but the grill is so good because of cleanup, and very fast re-heat after you open the lid. Also the pizza places will sometimes sell you the dough, but the store dough is good too.

That sounds so good! I will need to put that on my list of things to try. And to buy, since I don't own a pizza stone yet :)
