Thanksgiving Cometh Early

Today is our office Thanksgiving luncheon. As a typical over-acheiever Betty, I signed up first on the list to bring something, and decided to try a new recipe, an Apple Butter Pumpkin Pie. I figure, the office staff can be my unofficial testers :)

But also as a typical over-acheiver Betty, I was too busy with other things and came home last night and realized late that I did not have the supplies. Thus, I had to do a Kroger run at like 10pm, and then was literally up this morning at 7am baking. Typical. 

Here's hoping it goes over well! If people like the filling, I will make it again, but in a homemade crust, because as great as that $2 premade frozen one from Kroger is, it just doesn't look as fab as I'd like for the end presentation. The filling was way easy, too, something that even you non-bakers could put together. Though now reading the reviews of the recipe, I am a bit worried about how it will slice out, as some people said the filling doesn't hold up out of the pie. I will keep you posted on how it goes over!
