A Frugal Cabinet

What do you keep in your pantry? I need some help.

I am pathetic. My refrigerator right now consists of the following: grated Parmesan cheese, skim milk, wine, eggs, condiments galore, and Slim Fast (always have some of this around in case I am on the run in the mornings and need something to go).

How sad is that??

My pantry is a bit better - arborio rice, cereal, pancake mix, baking supplies, a can or two of soup, enchilada sauce, and chicken stock. And my freezer has some chopped-up herbs, and some frozen soups I thought ahead to make, like this one.

Somewhere in there is a few meals, I know it. I just have to get creative. So last night, I threw together a Parmesan Risotto from an earlier post of mine for a light comfort meal. Tonight, it may be some soup, or breakfast for dinner. Maybe I can grab $10 worth of ingredients for enchiladas later this week.

Either way - I need to pick up some other staples to keep in there for weeks just like this one. What are your recommendations?
