Yet Another Easy Weeknight Meal (Do you see a trend?)

Well obviously. Buckhead Betty does not have time during the week to be slaving over a hot oven. Or a hot microwave for that matter. My meals have got to be fast, easy, and semi-gourmet Sandra Lee style. Though minus the martini that she'd be downing at the same time - I had to give up the Monday night cocktail hours. It just was not productive for this Irish gal.

Anyways - on to today's recipe that I am going to share with you. Another fab Malone family secret. I am sure my Mom loves that I keep giving away her secrets. But whatever, I like my readers to be hip to the everyday gourmet that is the Malone fam's specialty.

Taco Pie

1 lb. lean ground beef
1 package taco seasoning mix
2 8oz. cans crescent rolls (I use lowfat)
4 c. Mexican blend shredded cheese

First, brown up the beef, and drain. Add a package of taco seasoning mix and prepare according to directions. Put aside. This is the only active "cooking" you will need to do.

Take one package of lowfat crescent rolls, and push the two long rectangles together to make one big one. Put this on the bottom of a glass baking dish.

Then sprinkle 2 c. of Mexican shredded cheese on top of that.

Then spread the beef around on top of that.

Two more cups of Mexican shredded cheese.

And then the other can of crescent rolls in one big rectangle, on top it all. Press the edges around as much as you can.


Then bake at 400 degrees for 15 min, and voila! Fabulous taco pie. Serve it up with sour cream and tomatoes, and a side salad, and you have a fantastically easy meal - ready in about 25 minutes total, and it costs only about $10.
