Oddities All Around

Two quick thoughts then I am "leeeeaving, on a jet plane!" for the weekend. I am looking forward to the break, but I will miss you all in A-town. I hope you enjoy whatever it is that you have planned.

First up, a recipe ... if you can even call it that. It is more word-of-mouth goodness, because this is the easiest and fastest and oddest but BEST tasting chicken "recipe." Apparently the WW-aholics knew what they were doing when getting creative with recipe makeovers! It's so easy, I now know it by heart after only making it once, and you will, too. Three ingredients, and you're done.

Diet Coke Chicken
Serves 4; 4 WW points each

Spray a pan with Pam, and add 4 chicken breasts. Top with a mixture of 1 12-oz. Diet Coke can (yes, you read that right) and 1 cup of ketchup. Cover, and cook on medium heat for 45 minutes. Remove the lid, and cook for another 5-10 to thicken the sauce. Serve with rice, Asian-food style.

Secondly, I really enjoyed reading your quirks the other day on my Top 10 {Tuesday} post. Thanks for sharing yours -- it's good to hear that some of you are secretly as oddball as I am :)

I was sitting here today with a slightly sore throat, and did the whole "open your mouth and say ahhh" thing to myself in the mirror to see if my throat looked inflamed. It was at that moment that I realized I forgot one of my biggest quirks -- I am apparently part of the tiny 2% of the Caucasian population that has a split uvula!

Head to Wikipedia and check it out, especially if you are curious and like these odd medical things. It's not gross-looking, just weird. Apparently, they can cause one to be prone to middle ear infections (yes) and could even be linked to some syndrome that causes aortic aneurysms (ack). Don't worry -- so far, it's just an oddity that I mostly forget about in real life. If that isn't a quirk, then I don't know what is!
